Key Lime Pie

My siblings came to visit last weekend, so we decided to have a cookout with them and invite our friends.  It was great!  I decided to make a couple of new desserts, which were very good.  I found this recipe on foodnetwork.com, its a Paula Deen recipe.  My older sister Rachel helped me make it, it was a lot of fun cooking with her.  This is a very good pie, however yet again I wished I would have read of the reviews.  You freeze this recipe so it is more like ice cream and it melts easily.  Still very good!











Ingredients:
Crust:
2 cups graham cracker crumbs
1/4 c firmly packed brown sugar
1/2 c butter, melted

Pie
1 c heavy whipping cream
1/2 c sugar
1 (12oz) can sweetened condensed milk
3/4 c fresh key lime juice
1 tbls key lime zest
1 pint half-and-haf
Fresh lime slices, for garnish if desired

Directions
1. Preheat oven to 350° F
2. In a medium bowl, combine cracker crumbs and brown sugar.  Stir in melted butter.  Press the mixture firmly into bottom and up the sides of a 10-inch spring form pan.  Bake for 8 minutes and let the crust cool completely.
3. In a large bowl, with an electric mixer at medium speed, beat the cream until slightly thickened.  Gradually, add the sugar, beating until soft peaks form.  Add condensed milk and beat until stiff peans form.  Beat in lime juice, lime zest, and half-and-half.  Once the mixture as reached desired flavor and consistency, gently spread pie filling over cooled crust.  Cover and freeze for 4 to 6 hours or until firm.  Serve cold.
